As the afternoons stretch out, the counter turns to coffee. An affogato is the shortest recipe here: one scoop of fior di latte, one espresso pulled over it at the last second, and no time at all to think about it before you eat it.
What to expect
Each affogato is built around one espresso and one scoop, poured at the counter so the coffee is still hot when it reaches the cream and the two are still separate when you start.
A flight of three sorbetti from whatever the market had that morning, tasted side by side.
A look at the batch freezer while it runs, and a spoon of it before it sets.
Seasonal pairings: citrus, stone fruit and dark chocolate, set against the plainer cream bases.
How to join
Espresso is pulled to order and never in advance, so an affogato takes exactly as long as an espresso takes. If the queue is out of the door it is worth the wait, and if it is not, you have lost ninety seconds.
